Kona Inspired Blackened Mahi Mahi over Power Greens

It’s race week on the Big Island. Back home, family and friends are also getting ready to watch the show live on Saturday, October 11th.

Are you planning a Kona party to celebrate and cheer on local and pro favourites? Try this Kona inspired recipe. It’s sure to be a crowd pleasure, and will make you feel like you are sitting curbside at Lava Java watching your athletes pass. This recipe is protein rich with essential fatty acids, vitamin A, vitamin C and iron.

You can also give a Canadian spin to this recipe and substitute Mahi Mahi for Atlantic Salmon. Enjoy blackened fish with tropical pico de gallo over  Earthbound Organic Power Greens (baby spinach, baby red and green chard, and baby kale) or with warmed tortillas. Add a cilantro-lime yogurt dressing for heightened enjoyment.

Blackened Mahi Mahi or Atlantic Salmon

Ingredients:
• 1 teaspoon ground cumin

  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
    • 1/2 teaspoon ground ginger
    • 1/2 teaspoon smoked paprika
    • 1/2 teaspoon kosher salt
    • 1/2 teaspoon ground black pepper
    • 1/4 teaspoon ground red pepper
    • 2 tablespoons olive oil
    • 4 Mahi Mahi fillets (4 oz each) or Atlantic Salmon
    • PAM® Grilling Spray

Directions:

  • Mix all spices, herbs, salt and black and red peppers in a small bowl.
    • Stir in olive oil to make a paste. With a brush, spread half of the paste on fish and set aside.
    • Lightly spray grill or pan with PAM and put on high heat;
    • When hot, add fish with paste side down. Brush uncooked side of fish with paste. Cook 3 to 4 minutes per side, turning once.
    • Brush any remaining paste on cooked fish.

Tropical Pico de Gallo
Ingredients
• 3 medium beefsteak tomatoes, diced
• 1 medium mango, peeled, diced
• 1 cup of fresh papaya, seeded and diced
• 1 jalapeno pepper, seeded, diced
• 1/2 cup diced red onion
• 2 tablespoons chopped fresh cilantro
• 1 teaspoon ground cumin
• 1 teaspoon minced garlic
• 1 lime, juiced
Directions
• Combine ingredients with in a medium size bowl. Set aside and chill. Tip: Can be prepared in advance.
