Fast and healthy breakfast recipe: Blueberry breakfast pudding
A twist on a smoothie for those that don't like to drink their breakfast.

A quick, delicious and nutritious breakfast option similar to a smoothie bowl for those who don’t like to drink their breakfast.
Nutrition highlights
It’s a vegan, dairy free and wheat free twist on a smoothie for those that don’t like to drink their meals.
Blueberries are high in antioxidants (anthocyanins), low on the glycemic index and 1 cup contains roughly the following RDIs for 32% vitamin K, 25% manganese and 19% Vitamin C.
Hemp hearts contain Omega 3 fatty acids which are known to improve the immune system and reduce inflammation. Â 1 tbsp of hemp hearts contains roughly 5g of protein and about 13% of your RDI of iron.
Avocado is a health mono-unsaturated fat, rich in potassium, and a source of magnesium, copper and Vitamin C, B5, B6 and Folate.
Ingredients
- 1 cup unsweetened almond milk
- 1/2 avocado
- 1 cup blueberries
- 2 tbsp hemp hearts
- 1 scoop chocolate Vega Protein power (or your other favourite clean brand)
- 1/4 raw cashews
- 1 tbsp flax seeds
- 1 tbsp spirulina powder (or chlorella)
- 1 tbsp raw cacao nibs
Instructions
- Put all ingredients in a Vitamix or food processor (a blender will likely not work as it’s so thick). Blend everything together until you get a nice smooth consistency. Top with 1 tsp of the hemp seeds.
- Makes 1 portion, enjoy!
