Blueberry Muffin Smoothie

Sometimes a rainy day will throw your nutrition goals off track. When it’s really cold and grey outside, I just want to curl up on the couch with a bowl of mashed potatoes. But, if you make this smoothie, you’ll have the best of both worlds — the comfort of a blueberry muffin and the great nutrients from hemp hearts, kefir and spinach, as well as antioxidants from blueberries. Plus, the oats will fill you up, so you won’t be craving those mashed potatoes all day.
Needless to say, don’t judge a smoothie by its colour. The most delicious smoothies typically fall into “Cement Mixer” categories. Mixing any sort of berry with the bright green from spinach leaves is a nasty rainbow combination. Just close your eyes and imagine it’s purple, pink or whatever you want. Or put it in an opaque container so you don’t have to look at it. Whatever you do, don’t miss out on this goodness.
This recipe makes one smoothie that’s so delicious, you won’t care what it looks like.
Ingredients
- 1⁄2 cup frozen blueberries
- 1⁄4 cup rolled oats
- 2 tbsp hemp hearts
- 1 cup cashew milk unsweetened
- 1⁄4 tsp vanilla extract
- 2 tbsp plain kefir
- 1 tsp lemon zest from 1⁄2 lemon
- 1 large handful baby spinach
- 3 small pitted dates pits removed
- 2 ice cubes
Directions
Blend all ingredients until smoothie is reminiscent of a rainy day.
